Privacy and cookie policy
The Panostrati taverna website is informational: it has no user accounts, forms or online payments. Below we explain the little data it processes, under the EU General Data Protection Regulation 2016/679 (GDPR) and Greek law 4624/2019.

What we process
- AI assistant ("Ask us"). What you type in the chat is sent to Anthropic PBC (USA), which provides the AI, only to produce the answer. We don't ask for or need your name, email or phone number, so please don't type personal details. The conversation is kept only in your browser (sessionStorage) and is deleted when you close the tab. Anthropic does not use this data to train models and keeps it for a limited time under its own terms.
- Technical data. Like any server, our web server logs your IP address, the time and the page requested, for security and proper operation. The IP is also used briefly to limit the number of questions to the assistant.
- Google map. The map loads only if you choose to open it. Google LLC then receives your IP address and may set its own cookies, under the Google privacy policy.
- Phone reservations. When you call to book, we only note your name, time and number of guests, for the day of the booking.
We use no analytics (such as Google Analytics), no advertising cookies and no social media pixels. Fonts and photos load from our own server.
Legal basis
Legitimate interest in keeping the site secure and answering your questions (Art. 6(1)(f) GDPR), performing your booking (Art. 6(1)(b)) and your consent for the Google map (Art. 6(1)(a)), which you can withdraw at any time.
Recipients and transfers outside the EU
Our hosting provider, Anthropic PBC (AI assistant) and, with your consent, Google LLC (map). Anthropic and Google are based in the USA; transfers rely on the European Commission's Standard Contractual Clauses or the EU–US Data Privacy Framework. We never sell or share your data with anyone else.
How long we keep data
Server logs are kept for up to 6 months. The assistant's question limit is cleared after one hour. Booking details are deleted after the day of the booking.

Your rights
